Ingredients
  • 1 lb. lean ground beef
  • 2 cloves garlic, chopped
  • 1 cup onion, chopped
  • 1 cup celery, chopped
  • 1 cup green bell pepper, chopped
  • 3 1/2 cups tomatoes, diced
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. paprika
  • 1 cup frozen peas
  • 2 small carrots, diced
  • 1 cup uncooked rice
  • 1 1/2 cups water

Directions
  1. In a large skillet, brown the ground beef; add garlic, onion, celery and bell pepper. Continue cooking for 3 minutes more. Drain the grease.
  2. Add the remaining ingredients. Mix well. Cook over medium heat and cover skillet until boiling. Reduce heat to low; cover (do not lift lid until done) and simmer for 35 minutes. Serve hot.
