Ingredients
  • Deer liver, thinly sliced
  • Vinegar
  • Water
  • Flour
  • Salt and pepper
  • Deer fat
  • 1 onion, thinly sliced
  • 2 tsp garlic juice
  • Olive oil

Directions
  1. Put the slices of liver in a 50/50 mix of vinegar and water and let stand for 30 minutes.
  2. Drain and wipe dry.
  3. Dip each piece of liver in the flour, seasoned with salt and pepper.
  4. Saute the onion in th edeer fat unti lgolden brown.
  5. Add the garlic juice to the onion.
  6. Saute the liver slices separately in onlive oil.
  7. When brown and cooked on both sides (5 minutes), cover with the onion-garlic sauce and serve.

I don't like deer fat. I'll try it with bacon drippings. Sounds good otherwise.
