Dried Minced Vegetables Recipe
I would do 1 vegetable at a time and then you can mix them later if you want... these are great to add to soups or stews... I have an expensive small bottle in my cabinet but this is much less expensive..

Ingredients
  • 1 to 2 cups vegetables, finely chopped:
  • onions, mushrooms, red or green bell peppers,
  • scallions, carrots or celery

Directions
  1. Heat oven to 120 degrees F. Spread finely chopped vegetables in a thin layer on a cookie sheet. Dry in oven until crisp. Leave the tray in the oven for at least 12 hours, stirring occasionally.
  2. Cool and store immediately in a sterilized dry glass or metal container with a tight-fitting lid for up to 6 months on the shelf.

^5 neat recipe...do you keep heat on in oven for 12 hours? or just until crisp and then leave in oven.
