Upside-Down Strawberry Shortcake

- 1 cup miniature marshmallow shopping list
- 1 16oz pkg. frozen strawberries-thawed and sliced shopping list
- 1 3oz pkg. strawberry gelatin shopping list
- 1/2 cup butter shopping list
- 1 1/2 cups sugar shopping list
- 3 eggs shopping list
- 1 teaspoon vanilla extract shopping list
- 2 1/2 cups cake flour shopping list
- 2 teaspoons baking powder shopping list
- 1/2 teaspoon salt shopping list
- 1 cup milk shopping list
- 1 16oz tub whipped topping shopping list
- additional sliced strawberries-optional shopping list
How to make it
- Sprinkle marshmallows evenly into a greased 13" x 9" x 2" baking
- dish. Set aside.
- In a medium mixing bowl,combine strawberries and gelatin. Set aside.
- In a large mixing bowl,cream butter and sugar together until fluffy.
- Add eggs one at a time,beating well after each addition.
- Beat in vanilla.
- Combine flour,baking powder,and salt. Add to butter mixture alternately with milk.
- Pour batter over marshmallows.
- Spoon strawberry mixture evenly over batter.
- Bake at 350 degrees for 45-50 minutes.
- Cool completely in pan.
- Spread whipped topping over cake. Garnish with additional sliced strawberries. Refrigerate until ready to serve.
