Simple but Delicious Eggplant Parm

- 1 med. eggplant, peeled and sliced into very thin slices (1/4 in.) shopping list
- bread crumbs, panko Japanese crumbs, Parm cheese - to taste shopping list
- 1-2 eggs shopping list
- 1 large tomato shopping list
- cheese to top, I used Asiago/Parm combo shopping list
How to make it
- Beat eggs with a little water in a flat bowl that will fit slices
- Dip slices in egg to coat, then in crumbs
- Lay out on greased broiler pan (this could also be done on the grill)
- Top with slice of tomato
- Top that with cheese (I like a lot of cheese)
- Place in oven to bake for about 30 min or until cheese is browned
- Turn on broiler to brown cheese more.
- Remove from oven and serve.
- Good with spaghetti and a salad or just as is.
