Simple But Delicious Eggplant Parm Recipe
can be frozen to use later as needed. good for single servings when done in the toaster oven

Ingredients
  • 1 med. eggplant, peeled and sliced into very thin slices (1/4 in.)
  • bread crumbs, Panko Japanese crumbs, Parm cheese - to taste
  • 1-2 eggs
  • 1 large tomato
  • Cheese to top, I used Asiago/Parm combo

Directions
  1. Beat eggs with a little water in a flat bowl that will fit slices
  2. Dip slices in egg to coat, then in crumbs
  3. Lay out on greased broiler pan (this could also be done on the grill)
  4. Top with slice of tomato
  5. Top that with cheese (I like a lot of cheese)
  6. Place in oven to bake for about 30 min or until cheese is browned
  7. Turn on broiler to brown cheese more.
  8. Remove from oven and serve.
  9. Good with spaghetti and a salad or just as is.
