DINNER IN A DISH WITH CHEESE CRESCENTS This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Jennet Estate in Allen, Texas in 1983.

Ingredients
  • 1-1/2 cups cut up celery
  • 4 hard cooked eggs halved
  • 2 cups cut up cooked chicken
  • 1/4 cup butter
  • 1/4 cup flour
  • 1-1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 2 cups milk
  • 1 small onion thinly sliced
  • 1/4 cup chopped green pepper
  • Cheese Crescents:
  • 2 cups flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup shredded American cheese
  • 1/3 cup salad oil
  • 2/3 cup milk

Directions
  1. Heat oven to 425.
  2. Arrange celery, eggs and meat in ungreased square baking pan.
  3. Melt butter over low heat then blend in flour, salt and pepper.
  4. Cook over low heat stirring until mixture is smooth and bubbly.
  5. Remove from heat and stir in milk then heat to boiling stirring constantly.
  6. Boil and stir 1 minute then stir in onion and green pepper then pour over meat and place in oven.
  7. Prepare crescents by measuring dry ingredients into a bowl.
  8. Measure oil and milk then pour all at once into flour mixture.
  9. Stir until mixture forms a ball then knead dough 10 times.
  10. Roll into circle 1/2” thick between 2 sheets of waxed paper then cut into 12 wedges.
  11. Roll up beginning at wide edges.
  12. Arrange 6 crescents on hot mixture then bake casserole uncovered 30 minutes.
  13. Remaining crescents can be baked on baking sheet 15 minutes.
