Oatmeal Cake With Broiled Frosting Recipe
I've seen a lot of good looking oatmeal cakes here but none exactly like this really old-fashioned one. I think the spices in the cake and the frosting ingredients make it extra good.

  • CAKE:
  • 1/2 c. butter, softened
  • 1/3 c. white sugar
  • 1/3 c. brown sugar
  • 1 t. vanilla
  • 2 eggs, beaten
  • 1 c. sifted all-purpose flour
  • 1 t. baking powder
  • 1/2 t. baking soda
  • 1/2 t. salt
  • 1 t. cinnamon
  • 1/2 t. nutmeg
  • 1/2 c. milk
  • 1 c. rolled oats (quick or old-fashioned, uncooked)
  • FROSTING:
  • 1/4 c. butter, softened
  • 1/2 c. brown sugar
  • 3 T. half and half
  • 1/3 c. chopped nuts (walnuts are OK but can use anything)
  • 1/2 c. flaked or shredded coconut

Directions
  1. Heat oven to 350
  2. Beat butter until creamy;
  3. Add sugars gradually and beat til fluffy;
  4. Add vanilla and eggs; mix well
  5. Sift together dry ingredients;
  6. Add to creamed mixture alternately with milk;
  7. Stir in rolled oats.
  8. Pour into a floured well-greased 9 inch square pan.
  9. Bake in preheated oven 30 to 35 minutes.
  10. FROSTING:
  11. Combine all ingredients;
  12. Spread evenly over cake;
  13. Broil until frosting becomes bubbly;
  14. Serve warm.
