Tomato And Basil Soup Recipe
Great way to use the ripe tomatoes and basil. Homemade chicken stock gives plus points. Delicious with hearty bread.

Ingredients
  • 1 large onion, coarsely chopped
  • 1 carrot, grated
  • 1/4 cup butter
  • 5 medium ripe tomatoes (about 1 ½ lbs.), peeled and quartered
  • 1/4 cup finely chopped fresh basil leaves
  • 1 teasp. salt
  • ½ tsp freshly ground black pepper
  • 3/4 tsp sugar (to keep the red color)
  • 2 cups chicken stock (pref. homemade)

Directions
  1. In 2 quart saucepan, sauté onion and carrot in butter till onion is soft
  2. Stir in tomatoes, basil, salt, pepper and sugar.
  3. Cover and simmer 15 min.
  4. Puree in a blender until smooth.
  5. Return the puree to the saucepan.
  6. Add chicken stock and reheat.
