Tomato and Basil Soup

- 1 large onion, coarsely chopped shopping list
- 1 carrot, grated shopping list
- 1/4 cup butter shopping list
- 5 medium ripe tomatoes (about 1 ½ lbs.), peeled and quartered shopping list
- 1/4 cup finely chopped fresh basil leaves shopping list
- 1 teasp. salt shopping list
- ½ tsp freshly ground black pepper shopping list
- 3/4 tsp sugar (to keep the red color) shopping list
- 2 cups chicken stock (pref. homemade) shopping list
How to make it
- In 2 quart saucepan, sauté onion and carrot in butter till onion is soft
- Stir in tomatoes, basil, salt, pepper and sugar.
- Cover and simmer 15 min.
- Puree in a blender until smooth.
- Return the puree to the saucepan.
- Add chicken stock and reheat.
