How to make it

  • Slice the vegetables to approx. size of the food ring
  • Toss them in olive oil
  • Spread out on a sheet pan
  • Salt and Pepper and add any spices you like
  • Bake the vegetables in a 400* oven until the vegetables become pliable
  • Layer the vegetable is the rings
  • Place on a sheet pan and bake until tender about 5-8 minutes
  • Place tomato sauce on a serving plate and unmold the vegetable stacks
  • If you can't find the vegetable molds you can insert a skewer through the center to keep the shape.
  • Sprinkle with balsamic vinegar
  • Top with sprouts and/or your favorite grated cheese
  • Var. In between the layers I add Feta and oil-cured Greek olives and egg plant and pour a cucumber sour cream sauce over the top.
  • Be creative !! Support you local farms.
