Twin Oaks Stuffed Fillet of Sole Florentine

- 18 sole fillets (3 ounces each) shopping list
- 1 pound cooked or frozen spinach shopping list
- 30 sliced black olives shopping list
- 6 ounces cheddar cheese (chopped) shopping list
- 18 slices mozzarella cheese (1 inch wide) shopping list
- 1 cup olive oil shopping list
- 1 clove of garlic shopping list
- salt and red pepper seeds to taste shopping list
How to make it
- In saucepan, brown garlic clove in oil. Remove garlic. Add spinach to oil for flavor then remove spinach and put in mixing bowl. Add chopped Cheddar cheese and olives. Mix thoroughly.
- Lay out fillets. Add one slice of mozzarella cheese to each fillet. Then add a heaping tablespoon of spinach mixture. Roll up fillets and place in oiled baking pan. Brush with a mixture of melted butter and lemon juice then sprinkle with a mixture of crushed Ritz crackers and bread crumbs.
- Bake in preheated 425-degree over for 20 minutes.
