Twin Oaks Stuffed Fillet Of Sole Florentine Recipe

Ingredients
  • 18 sole fillets (3 ounces each)
  • 1 pound cooked or frozen spinach
  • 30 sliced black olives
  • 6 ounces Cheddar cheese (chopped)
  • 18 slices mozzarella cheese (1 inch wide)
  • 1 cup olive oil
  • 1 clove of garlic
  • Salt and red pepper seeds to taste

Directions
  1. In saucepan, brown garlic clove in oil. Remove garlic. Add spinach to oil for flavor then remove spinach and put in mixing bowl. Add chopped Cheddar cheese and olives. Mix thoroughly.
  2. Lay out fillets. Add one slice of mozzarella cheese to each fillet. Then add a heaping tablespoon of spinach mixture. Roll up fillets and place in oiled baking pan. Brush with a mixture of melted butter and lemon juice then sprinkle with a mixture of crushed Ritz crackers and bread crumbs.
  3. Bake in preheated 425-degree over for 20 minutes.
