Cherylanns Quick and Easy Mini Chicken Pot Pies

- 2 cups frozen mixed vegetables (peas, carrots, green beans and corn). shopping list
- 12 ozs. precooked deli chicken, cubed shopping list
- 1 can cream of chicken soup shopping list
- 1/2 cup colby jack cheese shopping list
- 1 cup flour shopping list
- 2 tsp. baking powder shopping list
- 1/2 cup cream cheese spread shopping list
- 1/4 cup cold milk shopping list
How to make it
- Preheat oven to 400*.
- In a large bowl, mix vegetables, chicken and soup; spoon evenly into 4 (2-cup) oven proof bowls. Top with cheese.
- In a medium bowl, mix flour and baking powder in medium bowl. With pastry blender, cut in cream cheese until mixture resembles coarse crumbs. Stir in milk with a fork just until dry ingredients are moistened.
- Divide dough into 4 balls. Pat dough into 5" circles on lightly floured surface. Prick flattened dough with a fork to allow steam to escape. Place each biscuit on top of chicken mixture. Bake 25-30 minutes or until crust is golden brown. Let set 10 minutes before serving
