Wild Rice  Casserole Recipe
This is the dish when looking for something other than the usual potato or rice dish. Great accompaniment for both chicken and pork.

Ingredients
  • 1 pound sliced mushrooms
  • 3 tablespoon chopped green onion
  • 3 tablespoon margarine
  • 2 pkgs minute long grain & wild rice
  • 2 1/2 cups chicken brooth
  • 2 cups whipping cream
  • 1 cup dried tart red cherries or chopped dried appricots
  • 1 cup chopped pecans
  • 1/2 teaspoon salt

Directions
  1. Heat oven to 350 degrees
  2. Cook and stir mushrooms and onion in margarine in a large saucepan for 5 minutes or until golden.
  3. Stir in rice seasoning packets, broth, whipping cream, cherries, 3/4 cup pecans and salt.
  4. Mix well.
  5. Spoon into a greased 3 quart casserole and cover.
  6. Bake 50 minutes or until rice is tender and most of the liquid is absorbed.
  7. Uncover and sprinkle with remaining 1/4 cup chopped pecans.
  8. Continue baking 10-15 minutes or until pecans are toasted.
  9. Let stand 10 minutes before serving.
