Almond Chicken Salad With Ginger Marinade Recipe

Ingredients
  • 1 cup prepared Italian salad dressing
  • 2 teaspoons soy sauce
  • 1 teaspoon minced fresh ginger root
  • 4 boneless skinless chicken breast halves
  • 8 cups torn mixed salad greens
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup diagonally sliced green onions
  • 5 fresh peaches divided
  • 1/4 cup toasted sliced almonds
  • 2 tablespoons toasted sesame seeds

Directions
  1. In plastic bag combine salad dressing, soy sauce and ginger.
  2. Add chicken then close bag securely turning to coat well.
  3. Refrigerate 30 minutes.
  4. Arrange greens on serving plates then sprinkle with cilantro.
  5. Top with green onions.
  6. Slice 3 peaches and arrange on lettuce.
  7. Remove chicken from marinade reserving marinade.
  8. Grill or broil chicken until browned and cooked through basting occasionally with marinade.
  9. Halve remaining 2 peaches then baste with marinade and grill about 5 minutes.
  10. Slice chicken breasts and arrange chicken and grilled peaches on lettuce.
  11. In small saucepan bring remaining marinade to a boil.
  12. Add almonds and sesame seeds.
  13. Pour over salads and serve immediately.
