Coffee Pumpkin Stew

- 2 pounds beef stew meat, cut into 1 inch cubes shopping list
- 2 tablespoons safflower oil shopping list
- 3/4 cup stock, vegetable, beef or chicken shopping list
- 1/4 cup freshly brewed coffee shopping list
- 3 large Yukon potatoes, peeled and cut into 1 inch cubes shopping list
- 4 medium carrots, peeled and sliced shopping list
- 1 large red or yellow pepper, cut into 1/2 inch pieces shopping list
- 4 cloves garlic, minced shopping list
- 1 medium onion, chopped shopping list
- 2 bay leaves, crushed shopping list
- 1 teaspoon dried thyme shopping list
- 1 teaspoon salt shopping list
- 1/2 teaspoon pepper shopping list
- 1/4 teaspoon cayenne or to taste shopping list
- 1 large can diced tomatoes, undrained (14 ½ ounces) shopping list
- 1 very large pumpkin, 10-12 pounds shopping list
- 1 tablespoon oil (any kind) for coating the pumpkin while baking shopping list
How to make it
- Cut the meat, potatoes, carrots, pepper, garlic, and onion and set aside.
- In a large roaster or Dutch oven, brown meat in 2 tablespoons of oil.
- Add stock, potatoes, carrots, bell peppers, garlic, onion, spices, and salt then cover the pot and simmer for two hours.
- While cooking, brew the coffee.
- At the end of the two hours, stir in the tomatoes with the juice, then add the coffee and stir gently to incorporate.
- To prepare the pumpkin, wash the outside thoroughly then cut a large circle around the top stem, about 6 to 8 inches.
- Remove the top and set aside until ready to bake.
- Scoop out the seeds and loose fibers and discard. (Seeds can be dried or roasted for other recipes, if you desire.)
- Clean the bottom of the top of any seeds or loose fibers, too.
- In a shallow but sturdy baking pan, place the pumpkin in the center, then carefully spoon in the stew.
- Replace with the top and brush all the outside of the pumpkin with one tablespoon of oil.
- Bake for one hour, 45 minutes to two hours at 325ºF. or just until pumpkin is tender (easily pierced with a fork.)
- To serve, scoop out some of the pumpkin meat along with a hefty serving of the stew.
