Mediterranean Chicken Caserole

- 1 large chicken breast fillet, skin off shopping list
- 1 brown onion, halved and sliced shopping list
- 3 sticks celery, chopped into 2cm pieces shopping list
- 2 cloves garlic, crushed shopping list
- 5 or so button mushrooms, thickly sliced shopping list
- 2 cans chopped tomatoes shopping list
- 1 tsp chicken stock powder shopping list
- 3 large olives, sliced shopping list
- 1 tbsp fresh thyme (dried would still be ok) shopping list
- 1 cup frozen or canned peas shopping list
How to make it
- Cut any fat of chicken and cut it into about 8 chunks
- Spray slow-cooker pot with oil and cook the chicken for about 5 minutes, till slightly browned. Remove from pot.
- Add the onions and celery and cook for about 4 minutes, then add garlic and shrooms, cook another 2 minutes.
- Add the tomatoes, stock powder, olives, and thyme. Bring to boil and add chicken.
- Cover and let it simmer for about an hour.
- Add peas about 10 minutes before serving.
- Serve with pasta or mashed potato or crusty sourdough bread or whatever starchy delight takes your fancy.
- * if its too thick, just let it simmer with the lid off for a bit.
- * like any slow-cooker, the longer it cooks, the better.
