How to make it

  • Cut any fat of chicken and cut it into about 8 chunks
  • Spray slow-cooker pot with oil and cook the chicken for about 5 minutes, till slightly browned. Remove from pot.
  • Add the onions and celery and cook for about 4 minutes, then add garlic and shrooms, cook another 2 minutes.
  • Add the tomatoes, stock powder, olives, and thyme. Bring to boil and add chicken.
  • Cover and let it simmer for about an hour.
  • Add peas about 10 minutes before serving.
  • Serve with pasta or mashed potato or crusty sourdough bread or whatever starchy delight takes your fancy.
  • * if its too thick, just let it simmer with the lid off for a bit.
  • * like any slow-cooker, the longer it cooks, the better.
