Mediterranean Chicken Caserole Recipe
I just made this just tonight, and it was pretty much the best yeah.

Ingredients
  • 1 large chicken breast fillet, skin off
  • 1 brown onion, halved and sliced
  • 3 sticks celery, chopped into 2cm pieces
  • 2 cloves garlic, crushed
  • 5 or so button mushrooms, thickly sliced
  • 2 cans chopped tomatoes
  • 1 tsp chicken stock powder
  • 3 large olives, sliced
  • 1 tbsp fresh thyme (dried would still be ok)
  • 1 cup frozen or canned peas

Directions
  1. Cut any fat of chicken and cut it into about 8 chunks
  2. Spray slow-cooker pot with oil and cook the chicken for about 5 minutes, till slightly browned. Remove from pot.
  3. Add the onions and celery and cook for about 4 minutes, then add garlic and shrooms, cook another 2 minutes.
  4. Add the tomatoes, stock powder, olives, and thyme. Bring to boil and add chicken.
  5. Cover and let it simmer for about an hour.
  6. Add peas about 10 minutes before serving.
  7. Serve with pasta or mashed potato or crusty sourdough bread or whatever starchy delight takes your fancy.
  8. * if its too thick, just let it simmer with the lid off for a bit.
  9. * like any slow-cooker, the longer it cooks, the better.
