A really delicious side from a WW book. Wicked easy to make. WW points - 2 Diabetic ex -1 starch, 1 1/2 -V, 1/2 Fat Cal 112

Ingredients
  • 1 (16 ounce bag) fresh baby carrots
  • 1/3 C apricot preserves
  • 1 Tbl butter
  • 1 tsp orange rind, grated
  • 2 Tbl orange juice
  • 1/4 tsp salt
  • 1/4 tsp ground nutmeg

Directions
  1. Steam carrots, covered, 15 minutes or until tender, drain
  2. Meanwhile, combine preserves and butter in a small saucepan; cook over medium heat until preserves and butter melt
  3. Stir in orange rind and next 3 ingredients
  4. Reduce heat and simmer 5 minutes
  5. Add carrots and toss to coat
  6. 5 - 1/2 cup servings
