Ingredients
  • 2 pkg yeast
  • 1/4 cup luke warm water
  • 1/4 cup shortening
  • 1/2 cup sugar
  • 1 tsp salt
  • 2 eggs beaten
  • 1 cup milk scalded
  • 1 tsp grated lemon rind
  • 5 cups sifted flour

Directions
  1. Soften yeast in luke warm water.
  2. Add shortening, sugar, and salt to scalded milk, cool to luke warm.
  3. Add softened yeast, eggs, lemon rind & enough flour to make a stiff batter.
  4. Beat well, add enough more flour to make a soft dough.
  5. Turn out on lightly floured board and knead until satiny.
  6. Place in creased bow, cover with a tea towel, and let raise until double in bulk.
  7. When light, punch down. Shape into tea rings, rolls or coffee cake.
  8. Let rise until double in bulk again.
  9. Bake in moderate oven 270 degrees:
  10. 25-30 min for coffee cake & tea rings
  11. 20 - 25 min for rolls
