How to make it

  • Soften yeast in luke warm water.
  • Add shortening, sugar, and salt to scalded milk, cool to luke warm.
  • Add softened yeast, eggs, lemon rind & enough flour to make a stiff batter.
  • Beat well, add enough more flour to make a soft dough.
  • Turn out on lightly floured board and knead until satiny.
  • Place in greased bow, cover with a tea towel, and let raise until double in bulk.
  • When light, punch down. Shape into tea rings, rolls or coffee cake.
  • Let rise until double in bulk again.
  • Bake in moderate oven 270 degrees:
  • 25-30 min for coffee cake & tea rings
  • 20 - 25 min for rolls
