Ingredients
  • 4 egg whites
  • 1/2 cup sherry
  • 2 cups sugar
  • 2 teaspoons salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 8 cups pecan halves

Directions
  1. Preheat oven to 250.
  2. Spray two baking pans with nonstick coating spray.
  3. In a large bowl whisk egg whites until beaten then add champagne, sugar and salt.
  4. Whisk until blended.
  5. Add spices and nuts stirring until coated.
  6. Spread on baking pans.
  7. Bake at 250 for 1 hour stirring occasionally to prevent sticking.
  8. Remove from pans at once and cool on wax paper lined racks separating pecans into a single layer with two forks.
  9. Store at room temperature in airtight container.
