This is another bar that was made for a graduation party; again I don't know where I got it from. I don't do much with boxed cake mix, but this is really good. I suppose that will be my next challenge is to figure out a substitute for the cake mix... More

Ingredients
  • 1 package yellow cake mix
  • 1/2 cup butter, softened
  • 1 cup pecans, chopped
  • 4 eggs, divided use
  • 8 ounces cream cheese, softened
  • 16 ounces confectioners' sugar

Directions
  1. Preheat oven to 350 degrees. Lightly grease an 8 x 11 - inch baking pan and set aside.
  2. In a bowl, mix the cake mix, butter, pecans and 2 eggs with a large spoon. Transfer dough to baking pan and use plastic wrap or shill your hand with ice water to press the mixture into the pan, distributing it evenly. It will be very sticky.
  3. In a separate bowl, lightly beat the remaining 2 eggs. Add the cream cheese. Gradually add the confectioners' sugar and lightly mix. It should be slightly lumpy. Spoon the cream cheese mixture over the cake mixture and use the back of a spoon or spatula to spread it evenly.
  4. Bake for 45 to 50 minutes, or until dark golden brown. Cool thoroughly, at least 1 hour. Run a knife around the sides of the pan and cut into squares.

I decorate cakes as a hobby and so I am always picking up cake mixes when they're on sale. I always have them on hand, so it's fun to find recipes to 'doctor' them up into something other than cake. Thanks for sharing a delicious sounding recipe. - Natalie
