This is a very light and tasty pasta dish loaded with great flavors. It makes a nice light lunch or dinner with a dinner salad and a nice glass of wine. Enjoy

Ingredients
  • 1 pound spaghetti
  • 6 tablespoons olive oil
  • 1 small white onion minced
  • 4 large ripe tomatoes peeled seeded and diced
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon fresh basil minced
  • Parmesan cheese

Directions
  1. Bring a large pot of water to a boil.
  2. Add 1 tablespoon salt to the boiling water and stir in the spaghetti.
  3. Cook uncovered over high heat until pasta is tender but still firm to the bite.
  4. Meanwhile heat olive oil in a large skillet over medium high heat.
  5. Add onion and sauté 2 minutes then lower heat to medium low.
  6. Drain diced tomatoes and add to the onions stirring gently for 3 minutes.
  7. Add garlic, salt, pepper and basil then lower heat and gently simmer until pasta is cooked.
  8. Drain spaghetti into a strainer and add it to the sauté pan.
  9. Mix quickly over low heat until well combined.
  10. Top with parmesan cheese and serve immediately.
