Chewy Mint Brownie Cookies

- 2/3 cup Crisco shortening shopping list
- 1-1/2 cups brown sugar, packed shopping list
- 1 tbsp. water shopping list
- 1 tsp. vanilla extract shopping list
- 2 tsp. peppermint extract shopping list
- 2 eggs shopping list
- 1-1/2 cups all-purpose flour shopping list
- 1/3 cup cocoa shopping list
- 1/2 tsp. salt shopping list
- 1/4 tsp. baking soda shopping list
- 1 pkg. (12 oz.) semi-sweet chocolate chips shopping list
How to make it
- 1. Heat oven to 375°F.
- 2. Place length of foil on flat surface.
- 3. In large bowl, beat shortening, brown sugar, water, peppermint extract and vanilla on medium speed of electric mixer until well blended. Add eggs; beat well.
- 4. Stir together flour, cocoa, salt, and baking soda. Gradually add to sugar mixture, beating on low speed just until blended. Stir in chocolate chips.
- 5. Drop by rounded tablespoonfuls 2-inches apart onto ungreased cookie sheet.
- 6. Bake 7-9 minutes, or until cookies are set. Cookies will appear soft and moist. Do not overbake.
- 7. Cool 2 minutes; remove from cookie sheet to foil. Cool completely.
