Salmon Havarti Pesto Melt Recipe

Ingredients
  • 1 medium zucchini
  • 1-1/2 tablespoons mayonnaise
  • 1 tablespoon pesto sauce
  • 1/2 loaf Italian bread cut into 8 slices
  • 7-1/2 ounce salmon drained and flaked
  • 4 slices havarti cheese
  • 2 tablespoons butter

Directions
  1. Cut zucchini in half crosswise then slice each piece lengthwise into 4 pieces.
  2. In a small bowl combine mayonnaise and pesto sauce and mix well then spread over one side of 4 slices of bread.
  3. Top each with two slices of zucchini then one portion of salmon and a slice of cheese.
  4. Place the remaining 4 slices of bread over the top.
  5. Melt 2 tablespoons butter in a large skillet over medium low heat.
  6. Cook sandwiches in batches for 3 minutes per side.
