Salmon Havarti Pesto Melt

- 1 medium zucchini shopping list
- 1-1/2 tablespoons mayonnaise shopping list
- 1 tablespoon pesto sauce shopping list
- 1/2 loaf Italian bread cut into 8 slices shopping list
- 7-1/2 ounce salmon drained and flaked shopping list
- 4 slices havarti cheese shopping list
- 2 tablespoons butter shopping list
How to make it
- Cut zucchini in half crosswise then slice each piece lengthwise into 4 pieces.
- In a small bowl combine mayonnaise and pesto sauce and mix well then spread over one side of 4 slices of bread.
- Top each with two slices of zucchini then one portion of salmon and a slice of cheese.
- Place the remaining 4 slices of bread over the top.
- Melt 2 tablespoons butter in a large skillet over medium low heat.
- Cook sandwiches in batches for 3 minutes per side.
