How to make it

  • Preheat oven to 180C and line a 20cm round cake tin.
  • In a small saucepan, combine dates and water, bring to the boil. Remove heat and add bi-carb. Allow to cool.
  • In a large bowl, use electric beaters to combine butter and sugar, then the eggs, one at a time.
  • Fold in the self-raising flour, then the dates.
  • Put batter in the cake tin and bake for 55 minutes.
  • While the puddin's doing its thing, make the sauce; Just combine all the sauce ingridients in a medium saucepan till its all smooth and melted together.
  • When the Pudding's 55 minutes is up, pour 1/4 cup of the sauce over the top and bake for another 5 minutes.
  • Serve with icecream and more sauce.
