Beef And Spinach Manicotti Recipe
A fun way to serve pasta and different from the usual cheese stuffed manicotti.

Ingredients
  • 1 pkg. manicoti shells, cooked (approx. 14)
  • 1 (10-oz.) frozen chopped spinach, thaw and squeeze excess liquid
  • 1 lb. ground beef, browned
  • 2 cloves garlic, chopped
  • ¾ c. parmesan cheese (reserve ¼ cup)
  • 2 eggs
  • Salt and pepper to taste
  • 1 (15-1/2 oz.) jar spaghetti sauce

Directions
  1. Preheat oven to 350 degrees.
  2. Brown ground beef with garlic.
  3. Combine spinach, beef, cheese, and eggs.
  4. Pour ½ cup spaghetti sauce in bottom of baking dish.
  5. Stuff pasta shells with about 3 tablespoons of filling.
  6. Place stuffed manicotti on top of the sauce and pour remaining sauce over the top.
  7. Sprinkle with reserved cheese.
  8. Bake 45 minutes or until bubbly.
  9. Note:I like to cut the partially thawed block of spinach in small squares so the pieces of spinach are shorter. Then squeeze excess liquid.
