Stuffed Turkey and Spinach Shells

- 1(10 oz)package frozen chopped spinach, thawed and drained well shopping list
- 1(8-12 oz) package jumbo shell pasta shopping list
- 1 c cottage cheese shopping list
- 1 c parmesan cheese, divided shopping list
- 1 egg, slightly beaten shopping list
- 1 c mozzarella cheese, divided shopping list
- 1 lb ground turkey or turkey sausage, casings removed shopping list
- 1 onion, chopped shopping list
- 3 cloves garlic, chopped shopping list
- crushed red pepper flakes(optional) shopping list
- 4 oz mushrooms, sliced shopping list
- 24-32 oz spaghetti sauce(depending on how saucy you like it) shopping list
How to make it
- Microwave spinach according to directions and squeeze dry
- Preheat oven to 350
- Boil pasta in water according to directions and drain allowing them to cool enough to be handled
- In a large bowl combine spinach, cottage cheese, 1/2c of parmesan, egg, and 1/2 c of mozzarella cheese
- Brown meat with onion, garlic, red pepper flakes, and mushrooms, drain
- Add to cottage cheese mixture and combine
- Spread 1 c of spaghetti sauce over bottom of casserole dish
- Stuff shells with about 3 Tb of mixture each
- Arrange shells in dish
- Pour the rest of sauce over casserole and bake 15 minutes
- Sprinkle with remaining mozzarella and parmesan
- Bake another 15 minutes
