Stuffed Turkey And Spinach Shells Recipe

Ingredients
  • 1(10 oz)package frozen chopped spinach, thawed and drained well
  • 1(8-12 oz) package jumbo shell pasta
  • 1 c cottage cheese
  • 1 c parmesan cheese, divided
  • 1 egg, slightly beaten
  • 1 c mozzarella cheese, divided
  • 1 lb ground turkey or turkey sausage, casings removed
  • 1 onion, chopped
  • 3 cloves garlic, chopped
  • crushed red pepper flakes(optional)
  • 4 oz mushrooms, sliced
  • 24-32 oz spaghetti sauce(depending on how saucy you like it)

Directions
  1. Microwave spinach according to directions and squeeze dry
  2. Preheat oven to 350
  3. Boil pasta in water according to directions and drain allowing them to cool enough to be handled
  4. In a large bowl combine spinach, cottage cheese, 1/2c of parmesan, egg, and 1/2 c of mozzarella cheese
  5. Brown meat with onion, garlic, red pepper flakes, and mushrooms, drain
  6. Add to cottage cheese mixture and combine
  7. Spread 1 c of spaghetti sauce over bottom of casserole dish
  8. Stuff shells with about 3 Tb of mixture each
  9. Arrange shells in dish
  10. Pour the rest of sauce over casserole and bake 15 minutes
  11. Sprinkle with remaining mozzarella and parmesan
  12. Bake another 15 minutes
