ALOHA CHICKEN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Davis Estate in Irving, Texas in 1987.

Ingredients
  • 2 skinless boneless chicken breast halves cut into bite size pieces
  • 1 teaspoon ground ginger
  • 1 teaspoon paprika
  • 1 tablespoon onion powder
  • 2 tablespoons garlic salt
  • 3 tablespoons cider vinegar
  • 1 cup ketchup
  • 1/4 cup soy sauce
  • 20 ounce can crushed pineapple with juice
  • 1/4 cup packed brown sugar

Directions
  1. Preheat oven to 400.
  2. Arrange chicken pieces in a single layer in well greased rectangular baking dish.
  3. In small bowl mix together ginger, paprika, onion powder and garlic salt.
  4. Add vinegar and mix well then divide this mixture.
  5. Brush 1/2 over the chicken pieces and bake 15 minutes.
  6. Turn chicken pieces then baste with remaining vinegar mixture and bake 15 minutes longer.
  7. Meanwhile in a medium bowl combine ketchup, soy sauce, pineapple and brown sugar.
  8. Spoon pineapple mixture over chicken and bake 30 minutes longer then serve immediately.
