Eggless Banana Bread Recipe
Here's what you can do with those over ripe bananas.. try this before thinking of tossing them in the trash.. (i omitted the eggs on this recipe for my vegetarian friends) :D

Ingredients
  • 1 cup mashed bananas (about 3 pcs)
  • 1 1/2 cup sugar
  • 3/4 cup butter/shortening
  • 1/2 cup milk mixed with 2 tablespoons lemon juice
  • 1 teaspoon vanilla
  • 2 cups flour mixed with 1 teaspoon baking powder and 1 teaspoon baking soda
  • 1 cup walnut (or in our case I use peanuts but this is optional)

Directions
  1. Preheat oven 180*C
  2. cream butter/shortening and sugar
  3. gradually add milk+lime mixture
  4. blend in vanilla
  5. fold in mashed banana alternating with flour mixture
  6. pour batter on a greased loaf pan
  7. bake 15-20mins or until golden brown
  8. leave in pan for a few minutes before taking the bread off
  9. **cool completely before storing in freezer (that is if you'll have something left to keep :D) or serve hot with a cold glass of OJ.... hmmmmm i love it that way..

First of all, there is no way that any kind of sweet bread can bake in only 15-20 minutes. I ended up baking this for 50 minutes and it still was mushy when I pulled it out of the oven. Not only that, but it overflowed the loaf pan into the oven and made a huge mess! I won't ever make this again.
