This was such a simple recipe. Everyone really loved it. Its so great for all those Pot Luck Dinners and everyone begs you to bring it.

Ingredients
  • 1 tsp. oil
  • 1 lb. boneless skinless chicken breasts, chopped
  • 2-1/2 cups water
  • 2 zucchini, chopped
  • 1 small onion, chopped
  • 1 Tbsp. chopped fresh oregano
  • 1 pkg. (14 oz.) Deluxe Macaroni & Cheese Dinner
  • 1 can (14-1/2 oz.) stewed tomatoes, drained

Directions
  1. HEAT oil in large skillet on medium-high heat. Add chicken; cook 5 min. or until browned.
  2. ADD water, vegetables, oregano and Pasta. Bring to boil; simmer partially covered, 12 min. or until pasta is tender.
  3. STIR in Cheese Sauce and tomatoes; cook until heated through.
  4. NOTE:
  5. Substitute 2 tsp. dried oregano leaves for fresh oregano.

This was a big hit in my house last night. I made a couple of adjustments:
Used the tomato water as part of the 2 cups of water and added mushrooms and red peppers. I just cut back on the water a bit cause the extra veggies produced more water. Also I used cooked dark meat that I had left over and it worked AMAZINGLY. Thank you for this recipe.
