Parmesan-Dijon Chicken

- approx. 8-10 chicken breasts, thawed and fat trimmed off shopping list
- one sleeve of crushed Ritz crackers (crushed fairly fine) shopping list
- handful of parmesan cheese shopping list
- one stick of melted butter (1/2 cup) shopping list
- about 2 tbsp Dijon mustard shopping list
How to make it
- Preheat oven to 375 F
- In one bowl, combine crushed Ritz and parmesan cheese.
- In another bowl, combine the melted butter and the dijon mustard.
- Roll chicken breasts around in the butter mixture, and then in the cracker mixture.
- Place on baking sheets and bake for approx 30 mins, depending on your oven, until no pink remains.
