How to make it

  • Stir together oil, juice, capers, tomatoes, garlic, red pepper and cilantro then set aside.
  • Remove and discard any skin from fish then rinse and pat dry.
  • Cut fish into 4 serving pieces then season with salt and black pepper.
  • Spray wide nonstick frying pan with cooking spray and place over medium high heat.
  • Add fish and cook 8 minutes turning once.
  • Meanwhile in 6 quart pan cook linguine in boiling water for 2 minutes then drain well.
  • Set 2 tablespoons tomato mixture aside then lightly mix remaining mix with hot pasta.
  • Divide pasta among 4 warm plates and top each serving with a piece of fish.
  • Top fish evenly with reserved tomato mixture.
