Trout With Tomato Cilantro Linguine Recipe
TROUT WITH TOMATO CILANTRO LINGUINE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Sexton Estate in Addison, Texas in 1986.

Ingredients
  • 2 tablespoons olive oil
  • 1-1/2 tablespoons fresh lime juice
  • 1 tablespoon drained capers
  • 4 small roma tomatoes seeded and chopped
  • 2 garlic cloves minced
  • 1/4 teaspoon cayenne pepper
  • 1/3 cup fresh cilantro leaves
  • 4 trout steaks
  • 1/4 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • Olive oil or cooking spray
  • 10 ounces fresh linguine

Directions
  1. Stir together oil, juice, capers, tomatoes, garlic, red pepper and cilantro then set aside.
  2. Remove and discard any skin from fish then rinse and pat dry.
  3. Cut fish into 4 serving pieces then season with salt and black pepper.
  4. Spray wide nonstick frying pan with cooking spray and place over medium high heat.
  5. Add fish and cook 8 minutes turning once.
  6. Meanwhile in 6 quart pan cook linguine in boiling water for 2 minutes then drain well.
  7. Set 2 tablespoons tomato mixture aside then lightly mix remaining mix with hot pasta.
  8. Divide pasta among 4 warm plates and top each serving with a piece of fish.
  9. Top fish evenly with reserved tomato mixture.
