Trout Stuffed With Potatoes And Spinach Stuffing Recipe
TROUT STUFFED WITH POTATOES AND SPINACH STUFFING This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cullen Estate in Allen, Texas in 1984.

Ingredients
  • 2 tablespoons vegetable oil
  • 1 clove garlic minced
  • 1/2 pound spinach chopped
  • 4 medium red potatoes diced and cooked 10 minutes
  • 1 cup red wine
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 4 fresh trout cleaned

Directions
  1. Heat oil and sauté garlic and spinach three minutes then combine with potatoes and cheese.
  2. Season with salt and pepper.
  3. Blot trout dry and sprinkle cavities with salt and pepper.
  4. Preheat oven to 400 then oil a baking dish and sprinkle with shallots.
  5. Fill trout with stuffing mixture and place side by side on baking dish and sprinkle with wine.
  6. Cover with parchment or foil then bake 15 minutes.
  7. Uncover and dot with butter and bake 5 minutes longer.
