Peaches And Raspberries With Cream Meringue

- 2 12 oz. pkgs. frozen sliced peaches, defrosted and drained shopping list
- 2 12 oz. pkgs. frozen red raspberries, defrosted and drained, reserving juice shopping list
- 6 almond macaroons shopping list
- 3/4 c. sugar shopping list
- 2 egg whites shopping list
- 1/2 c. heavy cream shopping list
- 1/4 c. sour cream shopping list
How to make it
- Arrange half the peaches in the bottom of a crystal serving bowl.
- Cover with half the raspberries.
- Crumble the macaroons and mash them with 1/2 cup of the drained raspberry juice.
- Add half the sugar.
- Spread half of this mixture over the fruit in the bowl.
- Repeat these layers with the remaining peaches, raspberries and macaroon mixture and chill.
- An hour or less before serving time, beat the egg whites until foamy, gradually add the remaining sugar, and continue to beat until the meringue is thick and glossy.
- Fold in the heavy cream, beaten stiff and the sour cream.
- Spoon the cream meringue over the fruit and keep refrigerated until serving time.
- Serves 8.
