Brinjal With Scrambled Egg

- Brinjal 2 medium sized shopping list
- garlic 5 flakes shopping list
- ginger 1inch shopping list
- onion 1 large shopping list
- potato – 3 Medium sized shopping list
- Chilli – 2 shopping list
- cumin seed 1tsp shopping list
- black pepper powder- ½ tsp shopping list
- salt 2tsp shopping list
- turmeric powder 1tsp shopping list
- Egg- 2 nos shopping list
- tomato – 1 small and ripe shopping list
- coriander leaves 1 bunch shopping list
- oil to fry 2 tbsp shopping list
How to make it
- 1.Roast brinjals
- 2.De skin the brinjal and mesh it.
- 3.Boil the potatoes and de skin it mesh it properly without leaving any lump in it.
- 4.Cut onions in to fine slices
- 5.Make fine ginger juliennes
- 6.Crush garlic roughly
- 7.Add mashed potatoes in to the mashed brinjal
- 8.Add turmeric powder and salt and mix it well.
- 9.Heat oil in pan and when its warm add cumin seeds and let it splutter.
- 10.Fry the onions and when it turns golden add the ginger juliennes and chopped garlic, chilli in to it. Fry till it changes colour.
- 11.Add the mashed potato+ brinjal in to it and fry for some time when its starts to leave oil add the cumin powder.
- 12.Beat the egg and add a pinch of salt.
- 13.Spread the fried stuff towards the margin of the pan so as to make a ring and oil gets accumulated in the middle.
- 14.Add the egg and mix thoroughly and cook for 3 mins. Add black pepper powder.
- 15.Turn off the gas and garnish with fresh coriander leaves and ripe tomato pieces.
- 16.Enjoy with paranthas or rice .
