A very good lasagna that has been a favorite for years at my house.

Ingredients
  • Sauce:
  • 2 cloves garlic,minced
  • 3 tablespoons olive oil(extra virgin)
  • 1 onion, chopped fine
  • 1 cup finely chopped celery
  • 1/2 cup finely chopped green bell pepper
  • 1 can (14 1/2 oz)whole tomatoes, chopped (with liquid)
  • 2 cans tomato paste(6oz each)
  • 1 can tomato sauce(8oz)
  • 1 cup burgundy wine
  • 1 tablespoon garlic powder
  • 1 cup chopped mushrooms(optional)
  • 1 cup chopped black olives
  • 1 teaspoon dried Italian Seasoning Spice
  • 1 teaspoon dried parsley
  • 1 teaspoon onion salt
  • 1/2 teaspoon cracked black pepper
  • 1 cup beef broth or water
  • 1 1/2 pounds lean ground beef
  • 1/2 pound ground pork
  • salt to taste
  • other ingredients:
  • 1 package lasagna noodles
  • 8oz. shredded Parmesan cheese
  • 8oz. shredded cheddar cheese
  • 8oz. shredded mozzarella cheese
  • 3 cups small curd cottage cheese
  • 1 teaspoon garlic powder
  • 1/3 teaspoon Italian seasoning spice or oregano(dried or fresh)
  • 3 tablespoons butter
  • salt and pepper to taste
  • 2 teaspoons olive oil for cooking noodles

Directions
  1. Sauce:
  2. In large non stick skillet, Saute onions, celery, bell pepper,mushrooms, and garlic in olive oil until tender(about 2 minutes)
  3. Add ground beef and pork and continue to cook until browned.
  4. Remove some of the fat from the pan(not all)and stir in tomatoes, sauce, and paste.
  5. Mix well and stir in broth and spices.
  6. Stir in black olives.
  7. Let cook over med. low heat for 10 minutes.
  8. Stir in burgundy, cover and cook on low for 5 to 10 minutes longer.
  9. Season with salt to taste
  10. Cook noodles according to package directions, in large pot of boiling water with a little salt and olive oil added to prevent sticking.
  11. Drain pasta and add butter and a little salt and pepper, set aside till ready to assemble.
  12. In a med. bowl, Mix together the cottage cheese with the garlic powder and a little salt and pepper.
  13. To assemble:
  14. Divide the sauce into 5 equal parts.
  15. Spread 1/5 of the meat sauce on the bottom of a deep dish lasagna pan.
  16. Top with 1/4 of the noodles(3 or 4).
  17. Cover with more sauce, making sure all noodles are covered.
  18. Sprinkle top with mozzarella cheese.
  19. 2nd layer: lay another 1/4 of the noodles on top.
  20. Cover with more sauce.
  21. Spoon the cottage cheese over this layer.
  22. 3rd layer: lay another 1/4 of the noodles on top.
  23. Cover with sauce.
  24. Sprinkle Parmesan cheese over this layer.
  25. 4th and final layer: lay remaining noodles on top.
  26. Cover with remaining sauce.
  27. Sprinkle with cheddar cheese.
  28. Bake in preheated 350 degree oven for 35 to 40 minutes or until lightly browned.
  29. Remove from oven and allow to sit for 10 to 15 minutes before serving(if you can wait that long!)
  30. Serve with a beautiful garden salad and hot French or Italian bread and butter!
