How to make it

  • Sauce:
  • In large non stick skillet, Saute onions, celery, bell pepper,mushrooms, and garlic in olive oil until tender(about 2 minutes)
  • Add ground beef and pork and continue to cook until browned.
  • Remove some of the fat from the pan(not all)and stir in tomatoes, sauce, and paste.
  • Mix well and stir in broth and spices.
  • Stir in black olives.
  • Let cook over med. low heat for 10 minutes.
  • Stir in burgundy, cover and cook on low for 5 to 10 minutes longer.
  • Season with salt to taste
  • Cook noodles according to package directions, in large pot of boiling water with a little salt and olive oil added to prevent sticking.
  • Drain pasta and add butter and a little salt and pepper, set aside till ready to assemble.
  • In a med. bowl, Mix together the cottage cheese with the garlic powder and a little salt and pepper.
  • To assemble:
  • Divide the sauce into 5 equal parts.
  • Spread 1/5 of the meat sauce on the bottom of a deep dish lasagna pan.
  • Top with 1/4 of the noodles(3 or 4).
  • Cover with more sauce, making sure all noodles are covered.
  • Sprinkle top with mozzarella cheese.
  • 2nd layer: lay another 1/4 of the noodles on top.
  • Cover with more sauce.
  • Spoon the cottage cheese over this layer.
  • 3rd layer: lay another 1/4 of the noodles on top.
  • Cover with sauce.
  • Sprinkle Parmesan cheese over this layer.
  • 4th and final layer: lay remaining noodles on top.
  • Cover with remaining sauce.
  • Sprinkle with cheddar cheese.
  • Bake in preheated 350 degree oven for 35 to 40 minutes or until lightly browned.
  • Remove from oven and allow to sit for 10 to 15 minutes before serving(if you can wait that long!)
  • Serve with a beautiful garden salad and hot French or Italian bread and butter!
