Grilled  Jumbo Shrimp Skewers Recipe
Marinated jumbo shrimp, seasoned and grilled to perfection ... perfect for that special barbecuing cookout!

Ingredients
  • 2 pounds jumbo shrimp, peeled (tails on) and deveined
  • 2 cups chopped pineapple (to fit a skewer)
  • 2 cups skewer-sized green pepper
  • 2 tbsp olive oil
  • 2 tbsp white wine vinegar
  • juice of one whole lime
  • 1 1/2 tbsp crushed garlic
  • 1 tbsp chopped fresh parsley
  • 1/4 tsp paprika
  • 1/4 tsp salt
  • 1/8 tsp ground black pepper
  • 1/8 tsp crushed red pepper flakes
  • 12 (12-inch) bamboo skewers

Directions
  1. Combine shrimp in a large non-reactive bowl (glass, plastic or stainless) with olive oil, vinegar, garlic, parsley, paprika, salt, pepper and red pepper flakes.
  2. Cover and refrigerate for 1 hour.
  3. Preheat grill.
  4. Skewer shrimp, reserving marinade.
  5. Place on grill, baste with marinade, and cook for 3 minutes.
  6. Turn, baste once more and cook until no longer pink, about 3 more minutes.
  7. Drizzle with fresh lime juice.
  8. Serve immediately.
