Garlicky Couscous With Roasted Peppers Recipe
GARLICKY COUSCOUS WITH ROASTED PEPPERS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Scott Estate in Mabank, Texas in 1988.

Ingredients
  • 1 small red bell pepper
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 2 large cloves garlic peeled and lightly crushed
  • 1 cup couscous
  • Freshly ground black pepper

Directions
  1. Roast pepper in oven until blackened and blistered.
  2. Place in paper bag and set aside 15 minutes then slip skin off flesh.
  3. Remove stalk and seeds from pepper and rinse then dice and set aside.
  4. In medium saucepan combine 1-1/4 cups water, oil, salt and garlic then bring to a boil.
  5. Stir in couscous and remove from heat then cover and allow to stand 5 minutes.
  6. Fluff grains with a fork.
  7. Remove garlic cloves and stir in red peppers or pimientos.
  8. Season with pepper and serve hot.
