How to make it

  • Roast pepper in oven until blackened and blistered.
  • Place in paper bag and set aside 15 minutes then slip skin off flesh.
  • Remove stalk and seeds from pepper and rinse then dice and set aside.
  • In medium saucepan combine 1-1/4 cups water, oil, salt and garlic then bring to a boil.
  • Stir in couscous and remove from heat then cover and allow to stand 5 minutes.
  • Fluff grains with a fork.
  • Remove garlic cloves and stir in red peppers or pimientos.
  • Season with pepper and serve hot.
