Garlicky Couscous With Roasted Peppers

- 1 small red bell pepper shopping list
- 1 teaspoon olive oil shopping list
- 1/2 teaspoon salt shopping list
- 2 large cloves garlic peeled and lightly crushed shopping list
- 1 cup couscous shopping list
- Freshly ground black pepper shopping list
How to make it
- Roast pepper in oven until blackened and blistered.
- Place in paper bag and set aside 15 minutes then slip skin off flesh.
- Remove stalk and seeds from pepper and rinse then dice and set aside.
- In medium saucepan combine 1-1/4 cups water, oil, salt and garlic then bring to a boil.
- Stir in couscous and remove from heat then cover and allow to stand 5 minutes.
- Fluff grains with a fork.
- Remove garlic cloves and stir in red peppers or pimientos.
- Season with pepper and serve hot.
