Poached Salmon In The Microwave Recipe
This is the easiest and tastiest salmon I've ever cooked inside (without grilling outdoors) and your kitchen will not smell like you have cooked fish at all !!!!

Ingredients
  • 1/4 c. butter
  • 1/4 c. white wine ( any good white - pinot griogio; pinot noir; vouvray)
  • 1 TBSP. lemon juice
  • 1 tsp. sugar
  • 1 TBSP. + ( to taste) Dry Dill Weed
  • Salt & Pepper to taste
  • 4 Salmon fillets (skin on or off makes no difference) except place flesh side down if you have skin on. Easier to skin after cooking; it just rolls off.

Directions
  1. In a covered microwavable casserole dish combine butter, wine, lemon juice, sugar, dill weed and salt and pepper. Microwave until butter is melted. APPX: 1 and 1/2 to 2 mins. depending on micro oven.
  2. Add salmon.
  3. Cover.
  4. Microwave on high for 6 minutes.
  5. I have doubled and tripled this recipe and it is still perfect everytime.
  6. Of course, start with decent salmon fillets. They don't have to be fresh; quick flash frozen works also. (Defrost first in frig)

Sounds good but won't the fish come out rubbery?


No it doesn't. Has a nice firm texture ; just easy to flake.

Alterations


After serving the fillets , ladle the extra sauce over them. Or I usually have some type of rice and often use the sauce on that.
