Ingredients
  • 2 tbl olive oil
  • 1 lb cooked andouille or other smoked sausage
  • 1 onion chopped
  • 4 garlic cloves
  • 3 -14 1/2 or 16 oz cans kidney beans
  • 1 cup canned chicken broth
  • 1 tea creole seasoning or cajon seasoning
  • 3 cups cooked rice

Directions
  1. heat oil in large dutch oven
  2. add sausage cut in 1 inch peices, onion,garlic, saute untill onion is brown about 15 minutes.
  3. mix in kidney beans and every thing except the rice
  4. reduce heat to a medium low and let simmer , cover
  5. simmer untill flavors are blended and mixture is thickened
  6. about 45 minutes
  7. serve over bowls of rice
