EASY Peach and Apricot Cobbler

- 1/2 cup sugar shopping list
- 2 tablespoons cornstarch shopping list
- 1 can 1pound 13 oz sliced peaches, save the juice shopping list
- 1 10 1/2 oz apricot halfs, save the juice shopping list
- 1 tablespoon real butter shopping list
- 1 teaspoon almond extract shopping list
- Crust: shopping list
- 1/2 cup flour shopping list
- 1/2 cup sugar shopping list
- 3/4 teaspoon baking powder shopping list
- 1/4 teaspoon salt shopping list
- 2 tablespoon real butter softened shopping list
- 1 large egg shopping list
- Topping shopping list
- 1 cup heavy cream shopping list
- 2 tablespoons sugar shopping list
- 1/2 teaspoon almond extract shopping list
How to make it
- Preheat your oven to 400
- In a medium saucepan, mix together sugar and cornstarch
- Stir in 1/2 cup each of peach and apricot juice.
- Cook over medium heat while stirring.
- When it boils for about 2 minutes remove.
- Stir in butter, and almond extract
- Add peaches and apricots mix well
- Spoon in to a 1 1/2 quart dish.. If using BBQ USE METAL
- Mix all the crust ingredents together and pour or spoon over fruit
- Bake until top is a nice golded brown.
- Remove to a rack to cool just a bit
- Mix topping until it forms peaks
- Serve warm with whipped topping
- It's always good cold too, if there are left overs!
