How to make it

  • Season chicken legs with sumac, cumin, allspice, salt and pepper to taste
  • Bake at 375 degrees for 1 1/2 hours
  • Cut onions into small pieces
  • Season with salt and sumac (enough sumac to make the onions reddish in color)
  • Cook in oil (make sure to use a lot of oil, the onions should be "swimming") until soft
  • Place flat bread on pan
  • Cover bread with broth from the chicken and oil from the onions
  • Spoon onions over bread
  • Cook in the oven until bread is crispy (10 minutes or so)
  • Place chicken on onions
