How to make it

  • 425F oven
  • Cut potatoes lengthwise in half; place, cut sides down, in a foil lined baking pan
  • Bake 30 to 35 minutes or until tender
  • Scoop out centers of potatoes into a bowl, leaving 1/4 inch thick shells
  • Add cheese, milk, brown sugar and cinnamon to the potatoes; mash until blended
  • Spoon mixture into shells; top with nuts
  • Bake 8 minutes or until potatoes are heated through and nuts are toasted

    I made this for Thanksgiving. When I asked my sisters what they wanted me to bring for Christmas, they say to bring the sweet potatoes I made at Thanksgiving. Doesn't get better than that, does it? I tripled the recipe so as to have lots of leftovers. These freeze and nuke well.
