Twice Baked Sweet Potatoes

- 2 large sweet potatoes (1 1/2 lb) shopping list
- 2 ounces (1/4 8 oz pkg) neufchatel cheese, cubed shopping list
- 2 Tbl fat-free or 1% milk shopping list
- 1 Tbl brown sugar shopping list
- 1/4 tsp ground cinnamon shopping list
- 1/4 C pecan pieces shopping list
How to make it
- 425F oven
- Cut potatoes lengthwise in half; place, cut sides down, in a foil lined baking pan
- Bake 30 to 35 minutes or until tender
- Scoop out centers of potatoes into a bowl, leaving 1/4 inch thick shells
- Add cheese, milk, brown sugar and cinnamon to the potatoes; mash until blended
- Spoon mixture into shells; top with nuts
- Bake 8 minutes or until potatoes are heated through and nuts are toasted
