Ingredients
  • 2 tsp black pepper
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 3 lb boneless pork top loin roast (single loin)
  • 1/3 C molasses
  • 2 Tbl red wine vinegar
  • 1 Tbl reduced sodium soy sauce
  • 3 apples. cut in halves, wedges or slices
  • 2 red pears, cut as apples
  • 2 Tbl sugar

Directions
  1. 425 F oven Line shallow roasting pan with foil and spray with cooking spray
  2. Place meat rack in pan; set aside
  3. In a bowl combine pepper, salt and garlic powder
  4. Brush pork with 1 Tbl olive oil and rub with pepper mixture
  5. Place pork on rack in roasting pan and place in oven
  6. Roast 35 minutes
  7. Glaze
  8. In a skillet combine molasses, vinegar and soy sauce and bring to a boil
  9. Reduce heat and simmer 1 minute; remove to a bowl......set skillet aside for glazing fruit
  10. Brush pork with some of the glaze (reserving 2 Tbl for the fruit)
  11. Continue roasting for 20 minutes more, brushing with glaze halfway through
  12. Roast an additional 10 minutes or until a meat thermometer registers 150
  13. Remove from oven; cover with foil and let stan 10 minutes before slicing
  14. Meanwhile, in skillet used for glaze, heat 1 Tbl olive oil
  15. Toss fruit with sugar
  16. Add fruit to skillet; cover and cook 2 minutes over medium to medium low
  17. Uncover and cook 3 minutes more or until crisp tender
  18. Add reserved glaze; heat through
  19. Serve pork with fruit and drizzle with pan juices
