Pork Loin with Apples and Pears

- 2 tsp black pepper shopping list
- 1 tsp salt shopping list
- 1 tsp garlic powder shopping list
- 1 3 lb boneless pork top loin roast (single loin) shopping list
- 1/3 C molasses shopping list
- 2 Tbl red wine vinegar shopping list
- 1 Tbl reduced sodium soy sauce shopping list
- 3 apples. cut in halves, wedges or slices shopping list
- 2 red pears, cut as apples shopping list
- 2 Tbl sugar shopping list
How to make it
- 425 F oven Line shallow roasting pan with foil and spray with cooking spray
- Place meat rack in pan; set aside
- In a bowl combine pepper, salt and garlic powder
- Brush pork with 1 Tbl olive oil and rub with pepper mixture
- Place pork on rack in roasting pan and place in oven
- Roast 35 minutes
- Glaze
- In a skillet combine molasses, vinegar and soy sauce and bring to a boil
- Reduce heat and simmer 1 minute; remove to a bowl......set skillet aside for glazing fruit
- Brush pork with some of the glaze (reserving 2 Tbl for the fruit)
- Continue roasting for 20 minutes more, brushing with glaze halfway through
- Roast an additional 10 minutes or until a meat thermometer registers 150
- Remove from oven; cover with foil and let stan 10 minutes before slicing
- Meanwhile, in skillet used for glaze, heat 1 Tbl olive oil
- Toss fruit with sugar
- Add fruit to skillet; cover and cook 2 minutes over medium to medium low
- Uncover and cook 3 minutes more or until crisp tender
- Add reserved glaze; heat through
- Serve pork with fruit and drizzle with pan juices
