How to make it

  • 425 F oven Line shallow roasting pan with foil and spray with cooking spray
  • Place meat rack in pan; set aside
  • In a bowl combine pepper, salt and garlic powder
  • Brush pork with 1 Tbl olive oil and rub with pepper mixture
  • Place pork on rack in roasting pan and place in oven
  • Roast 35 minutes
  • Glaze
  • In a skillet combine molasses, vinegar and soy sauce and bring to a boil
  • Reduce heat and simmer 1 minute; remove to a bowl......set skillet aside for glazing fruit
  • Brush pork with some of the glaze (reserving 2 Tbl for the fruit)
  • Continue roasting for 20 minutes more, brushing with glaze halfway through
  • Roast an additional 10 minutes or until a meat thermometer registers 150
  • Remove from oven; cover with foil and let stan 10 minutes before slicing
  • Meanwhile, in skillet used for glaze, heat 1 Tbl olive oil
  • Toss fruit with sugar
  • Add fruit to skillet; cover and cook 2 minutes over medium to medium low
  • Uncover and cook 3 minutes more or until crisp tender
  • Add reserved glaze; heat through
  • Serve pork with fruit and drizzle with pan juices
