I also got this one from our local grocery store. Looks so pretty sitting on a bed of greens. This is so easy and it's low fat!

Ingredients
  • 1/4 cup low-fat cottage cheese
  • 1 Tbsp. lemon juice
  • 1 Tbsp. fresh dill, chopped
  • 2 cups scallops, steamed
  • 1 cup celery, finely chopped
  • 1/4 cup green onion, chopped
  • 1 Tbsp. Italian dressing
  • 6 0z. large pasta shells, cooked and drained
  • Assorted fresh greens, optional

Directions
  1. First steam the scallops and cook and drain the pasta.
  2. In blender, combine cottage cheese, lemon juice and dill until smooth.
  3. Pour cheese mixture into a bowl, add scallops, celery and onion, mixing well.
  4. In separate bowl, mix drained pasta with Italian dressing. Spoon salad mixture into shells.
  5. Serve over a bed of assorted greens.
