How to make it

  • Dice onion.
  • Crush garlic using either a large knife or a garlic press.
  • Place garlic and onion in blender.
  • Add lime juice, brown sugar, curry powder, red chili flakes and a few sprigs of coriander.
  • Blend for about 30 seconds, or until the mixture is of an even consistency.
  • Add peanut butter and coconut milk.
  • Put the lid on firmly and blend until smooth.
  • Transfer the blended mixture into a small serving bowl.
  • To garnish, crush 2 Tbsp peanuts and sprinkle over the sauce and add a sprig of coriander.
  • Serve at room temperature
