Polynesian Meatballs Recipe

A bit of minced ginger can also be added to the sauce if desired. Either way, this is a really good, quick, easy, cheap and tasty dish.

Ingredients
- MEATBALLS:
- 1 egg; beaten
- 1/4c. milk
- 1/2c. dry bread crumbs
- 2T. finely chopped onion
- 3/4. salt
- 1/2t. Worcestershire sauce
- 1lb. ground beef
- SAUCE:
- 1/2c. packed brown sugar
- 2T. cornstarch
- 1 (20oz.) can pineapple chunks with juice
- 1/3c. vinegar
- 1T. soy sauce
- 1 green pepper; cut into bite size pieces
- Sliced green onions (optional)
Directions
- MEATBALLS:
- Mix together 1st 6 ingredients; add to ground beef and mix well. Shape into balls.
- Brown meatballs on all sides.
- Remove meatballs from skillet and set aside.
- Drain fat from pan.
- SAUCE:
- Combine brown sugar & cornstarch in skillet.
- Stir in pineapple with juice; vinegar and soy sauce.
- Bring to a boil stirring constantly.
- Reduce heat. Cover and simmer for about 10 min. or until sauce thickens. Stir occasionally.
- Add green pepper. Cover and simmer until tender. Aprrox. 5 min.
- Return meatballs to skillet and heat through.
- Serve over rice and garnish with sliced green onions, cut on an angle; if desired.

These are so good! Very close to our family recipe.
Every so often we had a pot luck Friday at work. I always brought Polynesian Meatballs in a crock pot. There never were any left to take home.
