Date And Walnut Loaf Recipe
Low fat cake which is rich and tasty. Great served warm with all the low fatness gone by spreading lovingly with masses of butter... An old grandmothers recipie- always a good sign!!!

Ingredients
  • 50g butter
  • 150g/1 cup dark brown sugar, treacle, molasses or golden syrup
  • 250ml/1 cup water
  • huge pinch of salt
  • 250g pitted dates
  • 1 tspn bicarb soda
  • 1 tsp vanilla essence
  • 1 egg, lightly beaten
  • 300g/ bit more than 2 cups self raising flour (wholemeal is good)
  • 100g walnut pieces

Directions
  1. Preheat oven to 180C
  2. Put butter, sugar, water, salt and dates in a decent-sized saucepan and bring to boil. I say decent sized, because when you add the bicarb soda it can froth up to more than double its size.
  3. Remove from heat and immediately add bicarb soda and stir.
  4. Allow date mixture to cool until about body temperatue, then fold in vanilla, egg, flour and walnuts.
  5. Put mix into the loaf tin.
  6. Make the top fairly even, perhaps slighty lower in the center.
  7. Bake for about 40 to 50 minutes, or until a skewer comes out clean. Cool in the tin for 10 minutes, then on a wire rack.
  8. Serve warm with butter.
  9. Enjoy!!!!!!!
