Easy Garlic Spread Recipe
I first had this at Mustard's in the Napa Valley. It was sublime On baguette slices. It would be good on Anything!! barbqued meat, veggies, tomato slices, carrot sticks, celery ribs...enjoy!

Ingredients
  • 1 head of garlic
  • a little evoo*
  • extra virgin olive oil

Directions
  1. Preheat oven 350
  2. Remove the papery outer layer of skin from the garlic head, but leave the individual cloves attached.
  3. Slice off the top third of the head.
  4. Place the garlic head flat side down in a small glass or ceramic ovenproof casserole.
  5. Slowly drizzle a tablespoon of olive oil over the garlic.
  6. Cover tightly with foil or if your casserole has a lid, use it.
  7. Bake in a 350 degree oven for 35 to 40 minutes. If a toothpick can pierce a clove easily, then it is ready.
  8. Serve warm.
  9. Break apart the cloves and squeeze out the soft garlic!

I grew up outside of Gilroy, well Salinas is kind of outside of Gilroy. I had an Aunt and her second husband lived in Gilroy so garlic is a big part of my cooking. Always happy to see an interesting garlic recipe.

It (garlic) is a great anti-biotic too!! I put it in just about everything savory I cook. I save most of it to throw on at the end. and it's Fresh, sparkly, a bit hot!


I am going to try this, I can't get enough garlic. I had heard it had medicinal properties, what a wonder food.
