I have an abundance of tomatoes that a farmer dropped off. I have many plans for these tomatoes thanks to All the great GR people. I feel an urge to make a quick summer tomato sauce.

Ingredients
  • 20 - 30 ripe tomatoes, cored
  • 1/4 cup Ex virgin Olive Oil
  • 6 Cloves of garlic sent through a rasp
  • 1 lg. Onion minced
  • 1/2 cup of red wine
  • 1/4 cup minced flat leaf parsley
  • 1 tsp red pepper flakes
  • Salt, Pepper, sugar if need to rid the acidity

Directions
  1. Core all the tomatoes
  2. Place in a kettle with boiling salted water
  3. Remove the tomatoes from the pot when the skins start to slip off;drain
  4. In a very large skillet put the olive oil and heat on med until a drop of water "bounces" when dropped in.
  5. Add the onion and saute for 5 minutes
  6. Add the garlic and saute for 1 minute
  7. Set aside
  8. Remove the skins from the tomatoes
  9. Put in a food processor and pulsate in batches until you obtain the consistency that you like
  10. Pour into the skillet
  11. Add some wine
  12. Add the parsley , salt and pepper
  13. Simmer for 30 minutes, uncovered,
  14. Place a ladle full of the sauce in a small bow, allow to cool slightly and taste,
  15. Adjust the flavorings
  16. Now you have a basic tomato sauce that you can add meats, cheeses and vegetables to
  17. I like it just like this with a loaf of fresh Italian bread and a bowl of olive oil and minced garlic and a bottle of Red Table Wine. Now that's living!!!
