How to make it

  • Core all the tomatoes
  • Place in a kettle with boiling salted water
  • Remove the tomatoes from the pot when the skins start to slip off;drain
  • In a very large skillet put the olive oil and heat on med until a drop of water "bounces" when dropped in.
  • Add the onion and saute for 5 minutes
  • Add the garlic and saute for 1 minute
  • Set aside
  • Remove the skins from the tomatoes
  • Put in a food processor and pulsate in batches until you obtain the consistency that you like
  • Pour into the skillet
  • Add some wine
  • Add the parsley , salt and pepper
  • Simmer for 30 minutes, uncovered,
  • Place a ladle full of the sauce in a small bow, allow to cool slightly and taste,
  • Adjust the flavorings
  • Now you have a basic tomato sauce that you can add meats, cheeses and vegetables to
  • I like it just like this with a loaf of fresh Italian bread and a bowl of olive oil and minced garlic and a bottle of Red Table Wine. Now that's living!!!

    Very cool.. Quick and easy. Just in time too as I have my last major haul of tomatoes sitting in my garage. I will be trying this tonight. Nice one Sas High 5 ........;-)~ Jim
