How to make it

  • Preheat the oven to 180 degrees.
  • Cream the butter and sugar together.
  • Sift in the flour and baking powder and mix well.
  • Mix in the egg, seeds (raisins) and vanilla.
  • Gently fold in the cornflakes.
  • Place spoonfuls of mixture onto an un-greased baking tray and sprinkle with coconut if desired.
  • Bake for 12-15 mins until firmed and slightly browned.
  • Makes 10 big ones.
