this light, sweet, slightly spicy cake is perfect for birthdays. just frost with frosting of your choice and your good to go! This also makes a great batter for cupcakes.

This cake has wonderful flavor, but is super dry. I baked it for 30mins, but could have pulled it at about 20mins. In order to moisten it up some I suggest adding a 1/4 to 1/2 cup of canola oil.
